Beta-carotene is a colouring agent found in cow milk fat (a carotenoid which is precursor of
vitamin-A).
Buffalo milk does not contain this, hence it is not as yellow as cow milk.
Carrots and other vegetables like them contain the same carotene. Dairies use the same
carotenoid or annato (another natural colouring pigment) for imparting the same yellow colour to
table butter since people prefer it that way.
Carotene, a fat-soluble pigment, gives milk, cream, butter, ghee, and other dairy products with a
high fat content its characteristic yellow colour. Carotene serves as an antioxidant and a
precursor to vitamin A in comes to having to the colour of cow milk. The greenish-yellow
pigment riboflavin gives whey its distinctive colour.
